Hot Cocoa Cookies: The Ultimate Chocolate Winter Treat


Ingredients

  • 1 cup Unsweetened Cocoa Powder
  • 1 1/2 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter, softened to room temperature
  • 1/2 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 2 Large Eggs, at room temperature
  • 1 teaspoon Vanilla Extract
  • 1 cup Semi-Sweet Chocolate Chips (optional)
  • 1 cup Mini Marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Set this bowl aside.
  3. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Beat in the room temperature eggs one at a time, mixing well after each addition. Stir in the vanilla extract until just mixed through.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
  6. If using, gently fold in the semi-sweet chocolate chips into the dough with a spatula until evenly distributed.
  7. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes, or up to 2 hours.
  8. Use a 1.5 to 2-tablespoon cookie scoop to drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  9. Bake for 8-10 minutes, or until the edges are set but the centers still look slightly soft.
  10. Immediately after taking the cookies out of the oven, place 3-4 mini marshmallows on top of each warm cookie. Return the baking sheets to the oven for another 1-2 minutes, or until the marshmallows are puffed and slightly melted.
  11. Let the Hot Cocoa Cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
