Instructions

  1. In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until the mixture is light and fluffy. This process usually takes about 3-5 minutes.
  2. Beat in 2 large eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in 1 teaspoon of non-alcoholic vanilla extract.
  3. In a separate bowl, mix 2 cups of all-purpose flour with 1 teaspoon of baking powder and a pinch of salt. Gradually add this to the wet mixture, stirring until just combined.
  4. Once the dough is formed, divide it into two equal parts. In one half, mix in ¼ cup of cocoa powder and if desired, ½ cup of finely ground nuts. Leave the other half plain.
  5. On a floured surface, roll out each portion of dough into rectangles, about ¼ inch thick. Aim for uniform thickness for even baking.
  6. Place the cocoa dough on top of the plain dough. Gently press them together, ensuring they stick well. Starting from one end, carefully roll the layered dough into a tight log.
