Description

Hearty Meatloaf with Cheesy Mashed Potatoes is a comforting dish that combines savory meatloaf with fluffy, creamy mashed potatoes and a layer of melted cheese.


Ingredients

  • 1 lb ground beef (85/15 preferred)
  • 1/2 cup plain breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (for meatloaf)
  • 1/2 tsp black pepper (for meatloaf)
  • 3 cups mashed potatoes (prepared or leftover)
  • 1/4 cup sour cream
  • 2 tbsp butter
  • Salt, to taste (for potatoes)
  • Black pepper, to taste (for potatoes)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or aluminum foil. In a large mixing bowl, gently combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, 1/2 tsp salt, and 1/2 tsp black pepper until just mixed. Do not overmix.
  2. Shape the meat mixture into an oblong loaf (about 9-10 inches long) on the prepared baking sheet. Bake for 55-65 minutes, or until an internal temperature of 160°F (71°C) is reached in the thickest part.
  3. While the meatloaf bakes, prepare the mashed potatoes. If starting with raw potatoes, peel and cut 3 lbs russet or Yukon Gold potatoes into 1-inch chunks. Place in a pot, cover with cold salted water, bring to a boil, then simmer for 15-20 minutes until fork-tender. Drain thoroughly, returning potatoes to the hot, empty pot for a minute to steam off excess moisture.
  4. Add the sour cream and butter to the hot, drained potatoes. Mash until creamy and smooth. Season with salt and black pepper to taste. Adjust seasoning as needed.
  5. Once the meatloaf is done, remove it from the oven and transfer to a cutting board. Loosely tent with aluminum foil and let rest for 10-15 minutes before slicing into thick portions. Serve the sliced meatloaf alongside a generous scoop of the creamy mashed potatoes.
