Description

Creamy Chicken Pot Pie Orzo is a comforting dish that combines tender chicken, sweet peas, carrots, and a rich sauce with orzo pasta for a quick family meal.


Ingredients

  • 2 boneless, skinless chicken breasts, cooked and diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 8 oz orzo pasta
  • 2 celery stalks, finely diced
  • 2 carrots, finely diced
  • ½ yellow onion, finely diced
  • 5 tbsp butter
  • 2 tbsp olive oil
  • 2 cups chicken broth
  • ½ cup heavy whipping cream
  • 1 tsp chicken bouillon powder
  • ⅓ cup all-purpose flour

Instructions

  1. Cut chicken breasts into ½-inch pieces. Season with salt and pepper.
  2. Heat 1 tbsp olive oil in a large pot over medium-high heat. Sear half of the chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside. Repeat with remaining olive oil and chicken.
  3. In the same pot, add butter, diced yellow onion, celery, and carrots. Sauté for 7-10 minutes until softened and translucent.
  4. Sprinkle ⅓ cup all-purpose flour over vegetables. Stir continuously for 1-2 minutes to cook the flour and create a roux.
  5. Gradually whisk in 2 cups chicken broth until smooth, then add ½ cup heavy whipping cream. Stir until the sauce begins to thicken.
  6. Add chicken bouillon powder, onion powder, garlic powder, and paprika. Season with additional salt and black pepper to taste.
  7. Stir in 8 oz uncooked orzo pasta. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 10-12 minutes, stirring occasionally to prevent sticking.
  8. Once orzo is al dente, stir in the reserved cooked chicken pieces. Cook for another 2-3 minutes until heated through.
  9. Taste and adjust seasonings as needed. If the sauce is too thick, add a splash more broth. Remove from heat and let rest for 5 minutes before serving.
