- 2 boneless, skinless chicken breasts, cooked and diced
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper, to taste
- 8 oz orzo pasta
- 2 celery stalks, finely diced
- 2 carrots, finely diced
- ½ yellow onion, finely diced
- 5 tbsp butter
- 2 tbsp olive oil
- 2 cups chicken broth
- ½ cup heavy whipping cream
- 1 tsp chicken bouillon powder
- ⅓ cup all-purpose flour
Instructions
- Cut chicken breasts into ½-inch pieces. Season with salt and pepper.
- Heat 1 tbsp olive oil in a large pot over medium-high heat. Sear half of the chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside. Repeat with remaining olive oil and chicken.
- In the same pot, add butter, diced yellow onion, celery, and carrots. Sauté for 7-10 minutes until softened and translucent.
- Sprinkle ⅓ cup all-purpose flour over vegetables. Stir continuously for 1-2 minutes to cook the flour and create a roux.
- Gradually whisk in 2 cups chicken broth until smooth, then add ½ cup heavy whipping cream. Stir until the sauce begins to thicken.
- Add chicken bouillon powder, onion powder, garlic powder, and paprika. Season with additional salt and black pepper to taste.
- Stir in 8 oz uncooked orzo pasta. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 10-12 minutes, stirring occasionally to prevent sticking.
- Once orzo is al dente, stir in the reserved cooked chicken pieces. Cook for another 2-3 minutes until heated through.
- Taste and adjust seasonings as needed. If the sauce is too thick, add a splash more broth. Remove from heat and let rest for 5 minutes before serving.
