Ingredients

  • fresh flat-leaf parsley
  • chives
  • fresh dill
  • tarragon
  • anchovy paste (or capers)
  • shallots
  • mayonnaise
  • Greek yogurt
  • fresh lemon juice
  • garlic
  • romaine lettuce
  • English cucumber
  • bell pepper
  • grilled beef (optional)
  • chickpeas (optional)
  • eggs (optional)

Instructions

  1. Roughly chop your fresh parsley, chives, dill, and tarragon. Peel and roughly chop your shallot and garlic clove.
  2. In a blender or food processor, combine the chopped herbs, shallot, garlic, anchovy paste (or capers), mayonnaise, Greek yogurt, fresh lemon juice, and a good pinch of salt and black pepper. Blend on high until completely smooth and vibrant green.
  3. Transfer the dressing to an airtight container and refrigerate for at least 30 minutes.
  4. On a large cutting board, finely chop your romaine lettuce, English cucumber, and bell pepper into small pieces.
  5. In a large mixing bowl, add your finely chopped vegetables (and protein, if using). Pour about two-thirds of the chilled Green Goddess dressing over the chopped ingredients. Toss gently but thoroughly until everything is evenly coated.
  6. Transfer the dressed salad to a serving platter or individual bowls. Serve with sturdy pita chips, crackers, or as a vibrant side dish.
