- 500g Lean ground beef
- 1 Chopped onion
- 2 Diced carrots
- 2 Minced garlic cloves
- 250ml Low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 1kg Yukon Gold potatoes
- 50g Butter
- 100ml Milk
- 100g Grated cheddar cheese
Instructions
- Preheat your oven to 200°C (400°F).
- Peel and chop the Yukon Gold potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside.
- In a large skillet over medium heat, add a splash of oil. Once hot, add the chopped onions and cook until soft, about 5 minutes. Then, add minced garlic and diced carrots, cooking for another 3-4 minutes.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with a wooden spoon. Drain any excess fat.
- Stir in the Worcestershire sauce, beef broth, and any additional seasonings (like thyme or bay leaves). Let it simmer for about 10 minutes until the mixture thickens.
- Spoon the beef mixture into a baking dish. Spread the creamy mashed potatoes over the top, smoothing it out with a spatula. For added texture, use a fork to create peaks in the potatoes.
- If using, sprinkle the grated cheddar cheese evenly over the mashed potatoes.
- Place the cottage pie in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbling.
- Allow the pie to cool for about 10 minutes before serving.
