Ingredients

  • 2 cups almond flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Set your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with cooking spray or coconut oil.
  2. In a large bowl, combine the melted coconut oil, applesauce, lemon juice, lemon zest, and eggs. Whisk until smooth and fully incorporated.
  3. Gradually stir in the granulated sugar and vanilla extract into the wet mixture until well combined.
  4. In a separate bowl, mix the almond flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients. Stir until just combined.
  5. Transfer the batter into the greased loaf pan, smoothing the top with a spatula.
  6. Place the pan in the preheated oven and bake for about 50 minutes. A toothpick inserted into the center should come out clean.
