- 1 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 3 large eggs
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Set your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with cooking spray or coconut oil.
- In a large bowl, combine the melted coconut oil, applesauce, lemon juice, lemon zest, and eggs. Whisk until smooth and fully incorporated.
- Gradually stir in the granulated sugar and vanilla extract into the wet mixture until well combined.
- In a separate bowl, mix the almond flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients. Stir until just combined.
- Transfer the batter into the greased loaf pan, smoothing the top with a spatula.
- Place the pan in the preheated oven and bake for about 50 minutes. A toothpick inserted into the center should come out clean.
- Once baked, remove the loaf from the oven and let it cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
