Description

Garlic Lime Shrimp with Rice is a delightful and flavorful dish that combines succulent shrimp with zesty lime and fragrant garlic, served over fluffy jasmine rice.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 2 cups vegetable broth or water
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lime, juiced and zested
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh cilantro, for garnish
  • Optional: Lime wedges for serving

Instructions

  1. Place the jasmine rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
  2. In a medium saucepan, bring 2 cups of vegetable broth or water to a boil. Add the rinsed rice, cover, and reduce the heat to low. Cook for about 15-20 minutes until the liquid is absorbed and the rice is tender.
  3. In a bowl, combine the shrimp with lime juice, lime zest, paprika, salt, and black pepper. Allow it to marinate while the rice cooks, at least 10 minutes.
  4. In a large skillet, heat the olive oil over medium-high heat.
  5. Add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they turn pink and opaque.
  7. Once the shrimp are cooked, fluff the rice with a fork and add it to the skillet. Stir until well combined and heated through.
  8. Remove from heat and garnish with fresh cilantro before serving.
  9. Optional lime wedges on the side allow guests to adjust the lime flavor to their taste.
