Ingredients
Scale
- 1.5 lbs sirloin steak, flank steak, or ribeye, thinly sliced
- 2 tbsp soy sauce (low sodium)
- 1 tbsp Worcestershire sauce
- 1 tsp cornstarch
- 1/2 tsp black pepper
- 2 tbsp neutral cooking oil (canola, vegetable, or grapeseed)
- 2 cups long-grain white rice (Jasmine or Basmati)
- 3 cups cold water
- 1 tbsp unsalted butter
- 3–4 cloves garlic, minced very finely
- 1/2 tsp salt, or to taste
- 1/2 cup (1 stick) unsalted butter
- 8–10 cloves garlic, minced
- 1/4 cup chicken broth or beef broth
- 1 tbsp soy sauce (low sodium)
- 1 tbsp fresh lemon juice
- 1 tsp light brown sugar or honey
- 1/2 tsp black pepper
- 1/4 cup fresh parsley or cilantro, chopped
- Red pepper flakes, to taste (optional)
- Fresh chopped green onions (scallions) for garnish
- Additional fresh chopped parsley or cilantro for garnish
- Toasted sesame seeds (optional) for garnish
Instructions
- Freeze beef 15-20 min, then thinly slice against the grain (~1/4 inch thick). Marinate with 2 tbsp soy sauce, 1 tbsp Worcestershire sauce, 1 tsp cornstarch, 1/2 tsp black pepper for 15-20 min at room temp.
- Rinse 2 cups long-grain white rice under cold running water until the water runs mostly clear.
- In a medium saucepan, melt 1 tbsp unsalted butter over medium heat. Sauté 3-4 minced garlic cloves for 30-60 seconds until fragrant (do not burn). Add rinsed rice, stir for 1 minute. Pour in 3 cups cold water and add 1/2 tsp salt, stir. Bring to a rolling boil, then reduce heat to the lowest setting, cover tightly, and simmer undisturbed for 15 minutes. Turn off heat, let rest covered for another 10-15 minutes. Fluff gently with a fork.
- In a small saucepan or deep skillet, melt 1/2 cup (1 stick) unsalted butter over medium-low heat. Add 8-10 minced garlic cloves; sauté gently for 2-3 minutes, stirring, until very fragrant and slightly softened (do not brown).
- Add 1/4 cup chicken/beef broth, 1 tbsp low-sodium soy sauce, 1 tbsp fresh lemon juice, 1 tsp light brown sugar/honey, and 1/2 tsp black pepper to the garlic butter. Whisk well and simmer for 2-3 minutes until slightly reduced. Stir in half of the fresh chopped parsley/cilantro. Set aside.
- Heat 2 tbsp neutral cooking oil in a large skillet or wok over medium-high to high heat until very hot. Sear marinated beef in two batches (about half at a time) for 1-2 minutes per side until a nice browned crust forms. Do not overcrowd the pan. Remove seared beef to a plate and repeat with the remaining batch.
- Return all seared beef to the skillet. Pour the prepared garlic butter sauce directly over the beef. Toss gently to coat every piece. Let it simmer with the beef for about 1 minute to meld flavors.
- Spoon generous portions of the fluffy garlic butter rice onto serving plates. Top with the saucy garlic butter beef, drizzling any remaining sauce from the skillet. Garnish generously with fresh chopped green onions, remaining fresh parsley/cilantro, and optional toasted sesame seeds. Serve immediately.
