  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 3 cups beef broth
  • 1 cup red wine (optional, can substitute with additional beef broth)
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 23 sprigs fresh thyme
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 1 cup mushrooms, sliced (optional)
  • 2 tablespoons all-purpose flour (optional, for thickening)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes, browning them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften. Stir in the minced garlic and cook for another minute.
  3. Pour in the red wine and scrape the browned bits from the bottom of the pot. Cook for 2-3 minutes until the wine reduces slightly.
  4. Return the browned beef to the pot. Stir in beef broth, tomato paste, bay leaf, thyme, salt, and pepper. Bring the mixture to a simmer.
  5. Cover the pot and reduce the heat to low. Let the stew simmer gently for about 2 hours or until the beef is tender.
  6. If using, add sliced mushrooms during the last 30 minutes of cooking.
  7. Optional – to thicken, mix flour with a little cold water to make a slurry. Stir this into the stew and cook for an additional 10 minutes.
  8. Taste and adjust seasoning with more salt and pepper if necessary.
  9. Remove the bay leaf and thyme sprigs. Let the stew sit for 10-15 minutes before serving to allow flavors to meld.
