  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 8 corn tortillas
  • 1 ripe avocado, diced
  • ½ cup full-fat sour cream (or Greek yogurt)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 cup shredded Monterey Jack cheese
  • ½ cup salsa (your choice)

Instructions

  1. In a large pot, combine chicken breasts, chopped onion, minced garlic, and chicken broth. Bring to a boil over medium heat; then reduce to simmer for about 20 minutes until cooked through.
  2. Remove the chicken from the pot and shred it using two forks while warm. Let cool slightly before mixing with lime juice and seasoning.
