- 4 medium zucchinis
- 3 boneless skinless chicken breasts (about 1 lb)
- 1/2 cup sun-dried tomatoes (oil-packed)
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh basil leaves
- 3 garlic cloves (minced)
- 2 tsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Halve zucchinis lengthwise and scoop out the insides, leaving enough flesh to hold their shape.
- In a skillet, heat olive oil over medium heat and cook diced chicken until browned and no longer pink (6-8 minutes).
- Add minced garlic and chopped sun-dried tomatoes; cook for another 2-3 minutes until fragrant.
- Remove from heat and stir in feta cheese, basil, Italian seasoning, salt, and pepper.
- Spoon the mixture into each zucchini half and place on a lined baking sheet.
- Bake for 20-25 minutes until zucchinis are soft and cheese is melted.
