  • 1/2 cup All-Purpose Flour
  • 3/4 cup Unsalted Butter, softened
  • 1 1/4 cups Brown Sugar
  • 1/2 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 2 1/2 tsp Ground Cinnamon
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt

Instructions

  1. For the streusel: In a bowl, whisk 1/2 cup flour, 1/4 cup brown sugar, and 1/2 tsp cinnamon. Cut in 1/4 cup softened butter until coarse crumbs form. Chill mixture.
  2. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan.
  3. In a medium bowl, sift and whisk together 2 1/2 cups flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 2 tsp cinnamon. Set aside.
  4. In a large mixing bowl, cream together 1/2 cup softened butter, 1/2 cup vegetable oil, and 1 cup brown sugar on medium-high speed for 3-5 minutes until light and fluffy. Stir in 1 tsp vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
  6. Spoon half of the coffee cake batter into the prepared pan and spread evenly. Sprinkle half of the chilled streusel mixture over the batter.
  7. Carefully spoon the remaining batter over the streusel layer and gently spread. Sprinkle the remaining streusel topping generously over the top.
  8. Bake for 35-45 minutes, or until the edges are golden brown, the center is set, and a wooden skewer inserted comes out clean. If topping browns too quickly, loosely tent with foil.
  9. Remove from oven and let cool in the pan on a wire rack for at least 15-20 minutes before serving. Slice into portions and enjoy warm or at room temperature.
  10. Store leftover coffee cake in an airtight container at room temperature for 3-4 days, or refrigerate for up to a week. Gently warm slices in the microwave to restore tenderness.
