- 1/2 cup All-Purpose Flour
- 3/4 cup Unsalted Butter, softened
- 1 1/4 cups Brown Sugar
- 1/2 cup Vegetable Oil
- 1 tsp Vanilla Extract
- 2 1/2 tsp Ground Cinnamon
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
Instructions
- For the streusel: In a bowl, whisk 1/2 cup flour, 1/4 cup brown sugar, and 1/2 tsp cinnamon. Cut in 1/4 cup softened butter until coarse crumbs form. Chill mixture.
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan.
- In a medium bowl, sift and whisk together 2 1/2 cups flour, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 2 tsp cinnamon. Set aside.
- In a large mixing bowl, cream together 1/2 cup softened butter, 1/2 cup vegetable oil, and 1 cup brown sugar on medium-high speed for 3-5 minutes until light and fluffy. Stir in 1 tsp vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
- Spoon half of the coffee cake batter into the prepared pan and spread evenly. Sprinkle half of the chilled streusel mixture over the batter.
- Carefully spoon the remaining batter over the streusel layer and gently spread. Sprinkle the remaining streusel topping generously over the top.
- Bake for 35-45 minutes, or until the edges are golden brown, the center is set, and a wooden skewer inserted comes out clean. If topping browns too quickly, loosely tent with foil.
- Remove from oven and let cool in the pan on a wire rack for at least 15-20 minutes before serving. Slice into portions and enjoy warm or at room temperature.
- Store leftover coffee cake in an airtight container at room temperature for 3-4 days, or refrigerate for up to a week. Gently warm slices in the microwave to restore tenderness.
