Delicious Potato Pancakes with Savory Beef


Ingredients

  • 2 cups grated Russet potatoes (about 4 medium)
  • 1 lb lean ground beef
  • 1 medium yellow onion, finely chopped
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp vegetable oil for frying

Instructions

  1. Peel and grate the potatoes. Rinse under cold water to remove excess starch, then drain thoroughly.
  2. Heat oil in a skillet over medium heat. Sauté chopped onions until translucent, then add ground beef and cook until browned.
  3. In a mixing bowl, combine grated potatoes, cooked beef mixture, eggs, flour, salt, and pepper. Mix until just combined.
  4. Heat more oil in the skillet over medium-high heat. Drop spoonfuls of batter into the skillet, flattening slightly with a spatula. Cook until golden brown on both sides.
  5. Transfer pancakes to paper towels to absorb excess oil and serve warm with sour cream or applesauce.
