Delicious Potato Pancakes with Savory Beef

- 2 cups grated Russet potatoes (about 4 medium)
- 1 lb lean ground beef
- 1 medium yellow onion, finely chopped
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- 3 tbsp vegetable oil for frying
Instructions
- Peel and grate the potatoes. Rinse under cold water to remove excess starch, then drain thoroughly.
- Heat oil in a skillet over medium heat. Sauté chopped onions until translucent, then add ground beef and cook until browned.
- In a mixing bowl, combine grated potatoes, cooked beef mixture, eggs, flour, salt, and pepper. Mix until just combined.
- Heat more oil in the skillet over medium-high heat. Drop spoonfuls of batter into the skillet, flattening slightly with a spatula. Cook until golden brown on both sides.
- Transfer pancakes to paper towels to absorb excess oil and serve warm with sour cream or applesauce.
Notes
- These pancakes can be made ahead and reheated in the oven.
