- 1 can (15 oz) black beans, rinsed
- 1 cup frozen corn
- 1 cup fresh spinach, chopped
- 1 cup shredded sharp cheddar cheese
- 10 egg roll wrappers
- 2 tsp cumin
- 1 tsp chili powder
- Vegetable oil (for frying)
Instructions
- Cook the chicken in a skillet over medium heat until fully cooked (about 10 minutes). Shred the chicken once cooled.
- In a bowl, combine shredded chicken, black beans, corn, spinach, cheese, cumin, and chili powder. Mix thoroughly.
- Place about 2 tablespoons of filling in the center of each egg roll wrapper. Fold and roll tightly.
- Heat vegetable oil in a deep pan until shimmering. Fry the eggrolls in batches for 3-4 minutes on each side or until golden brown.
- Drain on paper towels and serve warm with your favorite dipping sauces.
