Description

A perfectly flaky cod fillet with a savory, golden-brown Parmesan-Panko crust, made effortlessly in the air fryer. This healthy, quick, and satisfying dish offers restaurant-quality results at home.


Ingredients

  • 1 ½ lbs Cod Fillets (46 portions)
  • ½ cup All-Purpose Flour
  • 2 large Eggs, whisked
  • ½ cup Finely Grated Parmesan Cheese (freshly grated recommended)
  • 1 cup Panko Breadcrumbs
  • 1 tsp Garlic Powder
  • ½ tsp Onion Powder
  • 1 tsp Dried Parsley
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • Cooking Spray or Olive Oil Spray
  • Lemon Wedges, for serving
  • Fresh Parsley, chopped (optional, for garnish)

Instructions

  1. Pat cod fillets very dry with paper towels; season lightly with salt and pepper.
  2. In three shallow dishes: Dish 1: Combine flour, garlic powder, onion powder, dried parsley, and black pepper. Whisk well. Dish 2: Whisk eggs thoroughly. Dish 3: Combine Parmesan cheese and Panko breadcrumbs. Toss well.
  3. Dredge each cod fillet in flour (Dish 1), then dip in egg wash (Dish 2), and finally coat generously with Parmesan-Panko mixture (Dish 3), pressing firmly. Place on a wire rack and let rest 5-10 minutes.
  4. Preheat air fryer to 380°F (195°C) for 5 minutes. Lightly spray the basket with cooking spray.
  5. Place breaded cod in a single layer in the air fryer basket; do not overcrowd. Lightly spray the top of the cod with cooking spray.
  6. Air fry for 8-12 minutes, flipping gently at the 6-minute mark for even browning. Cook until cod is opaque, flakes easily (internal temp 145°F/63°C), and crust is golden and crispy.
  7. Remove from air fryer, let rest 1-2 minutes. Serve immediately with lemon wedges and an optional sprinkle of fresh parsley. Reheat leftovers in air fryer at 350°F (175°C) for 5-8 minutes.
