- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1 1/2 cups broccoli florets
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the orzo pasta and toast for 1-2 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the broccoli florets, reduce heat to low, cover, and simmer for 10 minutes.
- Stir in the milk, shredded cheddar cheese, salt, and pepper.
- Cook, stirring occasionally, until the cheese is melted and the sauce is creamy, about 3-5 minutes.
- Serve the creamy one pot broccoli orzo hot.
