- 1 pound fresh crab meat
- 1 pound shrimp, peeled and deveined
- 4 cups seafood stock
- 1 cup heavy cream
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon paprika
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
- Stir in the diced tomatoes and cook for another 2-3 minutes until they soften.
- Pour in the seafood stock and bring to a boil. Reduce the heat and let it simmer for about 10 minutes.
- Stir in the paprika, Old Bay seasoning, salt, and pepper. Mix well to combine the flavors.
- Carefully add the peeled and deveined shrimp to the pot. Cook for about 5 minutes or until the shrimp turn pink and opaque.
- Gently fold in the fresh crab meat, being careful not to break it apart too much.
- Pour in the heavy cream, stirring gently to combine. Allow the bisque to heat through for about 5 minutes, but do not let it boil.
- Taste the bisque and adjust the seasoning as necessary.
- Remove from heat and ladle the bisque into bowls. Garnish with freshly chopped parsley.
