- 3 cloves fresh garlic, minced
- 8 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare the Pasta: Boil salted water in a large pot. Add pasta and cook until al dente (8-10 minutes). Drain and set aside.
- Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add sliced chicken breasts, seasoning with salt and pepper. Cook until golden brown (6-7 minutes).
- Add Garlic and Spinach: Stir in minced garlic for about 1 minute, then add spinach until wilted (2-3 minutes).
- Create the Creamy Sauce: Lower heat, pour in heavy cream, and stir continuously for about 5 minutes until thickened. Mix in grated Parmesan cheese.
- Toss Everything Together: Combine cooked pasta with the sauce mixture in the skillet. Toss well to coat.
- Serve: Plate the creamy chicken pasta and garnish with additional Parmesan and cracked black pepper.
