Instructions

  1. Prepare the Chicken: If using chicken breasts, slice them in half horizontally to create thinner cutlets, or pound them to an even ½-inch thickness. If using thighs, you can leave them whole or cut them into 1-inch pieces. Pat the chicken dry with paper towels and season generously on both sides with salt and freshly ground black pepper.
  2. Sear the Chicken: Heat a large skillet or non-stick pan over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter. Once the butter is melted and sizzling, add the chicken pieces to the pan in a single layer. Sear for 3-5 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove the chicken from the pan and set it aside on a plate, tented with foil to keep warm.
  3. Sauté Aromatics: Reduce the heat to medium. If the pan looks dry, add another teaspoon of olive oil or butter. Add the minced fresh garlic to the pan and sauté for about 30 seconds to 1 minute until fragrant.
  4. Deglaze the Pan: Pour ½ cup of chicken broth into the hot pan. Use a wooden spoon or spatula to scrape up all those flavorful browned bits from the bottom of the pan.
  5. Build the Creamy Sauce: Reduce the heat to low. Pour in the heavy cream and bring it to a gentle simmer. Add the entire package of Boursin cheese to the pan. Stir constantly until the Boursin cheese has completely melted and incorporated into the cream, creating a smooth sauce. This usually takes 2-3 minutes. Taste the sauce and adjust seasoning with salt and pepper if needed.
  6. Return Chicken and Finish: Carefully return the cooked chicken pieces to the pan with the creamy Boursin sauce. Gently stir to coat the chicken in the sauce. Let it simmer gently for 2-3 minutes, allowing the chicken to warm through.
