Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup canned pumpkin, unsweetened
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon dried thyme
  • 2 cups chicken broth
  • Salt and black pepper, to taste

Instructions

  1. Combine shredded chicken, canned pumpkin, diced onion, minced garlic, ground cinnamon, dried thyme, and chicken broth in a slow cooker.
  2. Season with salt and black pepper to taste. Stir all ingredients together until well combined.
  3. Cover the slow cooker and cook on the LOW setting for 2-3 hours, or on the HIGH setting for 1-1.5 hours, until the onion is tender and the stew is thoroughly heated and flavors have melded.
  4. Taste the stew and adjust seasoning with additional salt and pepper if desired before serving.
