Instructions
- Combine shredded chicken, canned pumpkin, diced onion, minced garlic, ground cinnamon, dried thyme, and chicken broth in a slow cooker.
- Season with salt and black pepper to taste. Stir all ingredients together until well combined.
- Cover the slow cooker and cook on the LOW setting for 2-3 hours, or on the HIGH setting for 1-1.5 hours, until the onion is tender and the stew is thoroughly heated and flavors have melded.
