- 4 cups low-sodium vegetable broth
- 1 medium carrot, diced
- 1 medium stalk celery, diced
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent (about 3-4 minutes).
- Add diced carrots and celery; stir for another 5 minutes until slightly softened.
- Pour in vegetable broth and bring to a gentle simmer.
- Stir in pastina pasta; cook according to package instructions (8-10 minutes) until al dente.
- Season with salt and pepper to taste. Add fresh thyme and parsley just before serving.
