Ingredients

  • 1 1/4 lb bone-in chicken breast
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 yellow onion, diced
  • 3/4 cup diced carrots
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/2 tsp mustard powder
  • 1/4 tsp ground sage
  • 1/4 tsp freshly ground black pepper
  • 2 tsp Italian seasoning
  • 6 cups low-sodium chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce
  • Salt, to taste
  • 1 (19-ounce) package refrigerated or frozen three-cheese tortellini
  • 1/2 cup heavy cream
  • 45 ounces fresh baby spinach, roughly chopped

Instructions

  1. Prep Vegetables & Chicken: Dice onion, carrots, and celery. Mince garlic. If using raw chicken, dice or cut into smaller pieces. If using pre-cooked chicken, shred or dice.
  2. Sauté Aromatics: In a large pot or Dutch oven, melt butter and heat olive oil over medium heat. Add diced onion, carrots, and celery; sauté for 8-10 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  3. Toast Herbs & Add Chicken (if raw): Stir in dried basil, parsley, oregano, mustard powder, sage, Italian seasoning, and 1/4 tsp pepper; cook for 30 seconds. If using raw chicken, add to the pot and sear lightly.
  4. Simmer Soup Base: Pour in chicken broth, Worcestershire sauce, and hot sauce. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20-25 minutes. If raw chicken was added, remove, shred, then return to the pot. Season with salt and pepper to taste.
  5. Cook Tortellini & Finish: Increase heat to a gentle simmer. Add tortellini and cook according to package directions (3-7 minutes) until al dente. Reduce heat to low, stir in heavy cream, and add fresh spinach, cooking until just wilted (1-2 minutes).
  6. Serve: Ladle hot soup into bowls. Garnish with fresh parsley (if desired) and serve with grated Parmesan cheese.
