  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced

  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season both sides of the chicken breasts with salt, pepper, smoked paprika, and Italian seasoning.
  3. Heat olive oil in a large, oven-safe skillet over medium heat. Sauté chopped onion and minced garlic for approximately 2 minutes until fragrant and translucent.
  4. Add broccoli, cherry tomatoes, zucchini, and bell pepper to the skillet. Sauté for 5-7 minutes until the vegetables are slightly tender but still vibrant.
  5. Move the vegetables to the edges of the pan, creating space in the center. Place the seasoned chicken breasts in the middle and sear for 3-4 minutes on each side until golden brown.
  6. Reduce heat to low. Evenly distribute mozzarella and Parmesan cheese over the chicken and vegetables.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.
  8. Let the dish rest for a few minutes before serving. Garnish with fresh basil leaves if desired.
