- 2 boneless, skinless chicken breasts
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1 cup zucchini, diced
- ½ cup bell pepper, diced (any color)
- 1 small onion, finely chopped

- 1 teaspoon Italian seasoning
- 1 teaspoon smoked paprika
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Season both sides of the chicken breasts with salt, pepper, smoked paprika, and Italian seasoning.
- Heat olive oil in a large, oven-safe skillet over medium heat. Sauté chopped onion and minced garlic for approximately 2 minutes until fragrant and translucent.
- Add broccoli, cherry tomatoes, zucchini, and bell pepper to the skillet. Sauté for 5-7 minutes until the vegetables are slightly tender but still vibrant.
- Move the vegetables to the edges of the pan, creating space in the center. Place the seasoned chicken breasts in the middle and sear for 3-4 minutes on each side until golden brown.
- Reduce heat to low. Evenly distribute mozzarella and Parmesan cheese over the chicken and vegetables.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.
- Let the dish rest for a few minutes before serving. Garnish with fresh basil leaves if desired.
