Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil diced potatoes in salted water until tender, about 10 minutes. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until soft, about 5-7 minutes.
  4. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until fully combined.
  5. Fold in the boiled potatoes, sautéed vegetables, and shredded cheddar cheese into the egg mixture. If you’re adding cooked sausage or ham, now’s the time to include it!
  6. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  7. Place the dish in the preheated oven and bake for 30-35 minutes or until the eggs are fully set and the top is slightly golden.
