Instructions
- Preheat your oven to 350°F (175°C).
- Boil diced potatoes in salted water until tender, about 10 minutes. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until soft, about 5-7 minutes.
- In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until fully combined.
- Fold in the boiled potatoes, sautéed vegetables, and shredded cheddar cheese into the egg mixture. If you’re adding cooked sausage or ham, now’s the time to include it!
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Place the dish in the preheated oven and bake for 30-35 minutes or until the eggs are fully set and the top is slightly golden.
- Allow the casserole to cool for about 5-10 minutes prior to slicing and serving.
