- 2 cups shredded cheese (cheddar or a mix)
- 2 cups beef broth or water

- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
- Stir in the chili powder, cumin, salt, and pepper, mixing well to combine.
- Add the uncooked rice to the skillet, followed by the diced tomatoes, corn, kidney beans, and beef broth. Stir to combine all ingredients evenly.
- Bring the mixture to a simmer, then cover the skillet, reducing the heat to low. Let it cook for about 10 minutes, allowing the rice to absorb the flavors.
- Remove the skillet from heat and sprinkle half of the shredded cheese over the mixture, stirring gently to incorporate.
- Transfer the mixture to a baking dish or leave it in the skillet if it is oven-safe. Top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
