  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 2 cups shredded cheese (cheddar or a mix)
  • 2 cups beef broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  4. Stir in the chili powder, cumin, salt, and pepper, mixing well to combine.
  5. Add the uncooked rice to the skillet, followed by the diced tomatoes, corn, kidney beans, and beef broth. Stir to combine all ingredients evenly.
  6. Bring the mixture to a simmer, then cover the skillet, reducing the heat to low. Let it cook for about 10 minutes, allowing the rice to absorb the flavors.
  7. Remove the skillet from heat and sprinkle half of the shredded cheese over the mixture, stirring gently to incorporate.
  8. Transfer the mixture to a baking dish or leave it in the skillet if it is oven-safe. Top with the remaining cheese.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
