- 2 Russet potatoes or Yukon Gold potatoes
- 3 tablespoons Olive oil or avocado oil
- 3 tablespoons Cajun seasoning
- 1 pound Large or jumbo shrimp (21–25 count or 16–20 count per pound)
- 2 Bell peppers (red, yellow, or orange)
- 1 Red onion
- 3 cloves Fresh minced garlic
- 2 tablespoons Fresh lemon juice
- 2 tablespoons Chopped fresh parsley or cilantro
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Wash and cut the potatoes into consistent wedges, then place them in a large bowl.
- Drizzle the potatoes with about 2 tablespoons of olive oil and sprinkle with 2-3 tablespoons of Cajun seasoning, tossing well to coat.
- Arrange the seasoned potato wedges in a single layer on the baking sheet and bake for 20-25 minutes, flipping halfway through.
- While the potatoes bake, prepare the shrimp and vegetables by combining thawed, patted dry shrimp with sliced bell peppers and red onion in a medium bowl.
- Drizzle the shrimp and vegetable mixture with another tablespoon of olive oil and sprinkle with 1-2 tablespoons of Cajun seasoning, tossing to coat.
- After the potatoes have baked, remove the sheet pan from the oven and add the shrimp and vegetable mixture, spreading it out in a single layer.
- Sprinkle minced garlic over the mixture and return the sheet pan to the oven, baking for another 8-12 minutes until the shrimp are opaque and pink.
- Once cooked, remove from the oven and squeeze fresh lemon juice over the dish, then sprinkle with chopped parsley or cilantro before serving.
