Ingredients

  • Fresh salmon fillets
  • Cajun seasoning
  • Ripe avocados
  • Fresh lime juice
  • Extra virgin olive oil
  • Chopped fresh cilantro
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry with a paper towel and season both sides generously with Cajun seasoning.
  3. In a large oven-safe skillet, heat 1-2 tablespoons of olive oil over medium-high heat. Once hot, place the seasoned salmon fillets skin-side down in the skillet.
  4. Sear the salmon for about 4-5 minutes until the skin is crispy without moving the fillets.
  5. Carefully flip the salmon fillets and transfer the skillet to the preheated oven. Bake for an additional 6-8 minutes until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  6. While the salmon is baking, scoop out the ripe avocados into a bowl. Add the juice of one lime, chopped cilantro, salt, and pepper. Mash gently until combined but still chunky.
  7. Once the salmon is done, remove it from the oven and serve topped with the avocado lime mixture. Garnish with lime wedges and extra cilantro if desired.
