- 12 large pasta shells
- 2 cups burrata cheese, torn into pieces
- 1 head of garlic
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup heavy cream
- Zest and juice of 1 lemon
- Salt, to taste
- Freshly cracked black pepper, to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese, for serving
Instructions
- Begin by preheating your oven to 400°F (200°C) for roasting the garlic.
- Slice the top off the head of garlic, drizzle with olive oil, and wrap it in aluminum foil. Roast for 25 minutes, until soft and caramelized.
- While the garlic roasts, bring a pot of salted water to a boil. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Squeeze the roasted garlic into the pan, discarding the skins. Stir until well mashed.
- Pour in the heavy cream, lemon zest, and juice. Stir gently, bringing the mixture to a simmer. Season with salt and pepper to taste.
- Stuff each pasta shell with burrata cheese, making sure to fill them generously.
- Add the stuffed shells to the sauce, spooning some over the top. Continue cooking for 2-3 minutes to heat through.
- Carefully transfer the pasta shells to serving plates.
- Sprinkle freshly chopped parsley and grated Parmesan cheese over the top for added flavor and presentation.
- Serve immediately while warm, enjoying the incredible blend of flavors.
