- 4 salmon fillets (6 ounces each)
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cayenne pepper
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- Fresh parsley, for garnish (optional)
Instructions
- In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Pat the salmon fillets dry with paper towels. Rub each fillet generously with olive oil. Sprinkle the seasoning mix evenly over both sides of the salmon.
- Place a large cast-iron skillet over medium-high heat and allow it to get very hot.
- Add the seasoned salmon fillets to the skillet. Cook for about 4-5 minutes on each side until cooked through and blackened.
- While the salmon cooks, whisk together the mayonnaise, Dijon mustard, and lemon juice in a separate bowl until smooth.
- Remove the salmon from the skillet and let it rest for a minute. Place each fillet on a plate and drizzle the creamy Dijon sauce over the top.
- Sprinkle chopped fresh parsley over the salmon if desired.
- Serve immediately while hot with your favorite sides.
