Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  2. Pat the salmon fillets dry with paper towels. Rub each fillet generously with olive oil. Sprinkle the seasoning mix evenly over both sides of the salmon.
  3. Place a large cast-iron skillet over medium-high heat and allow it to get very hot.
  4. Add the seasoned salmon fillets to the skillet. Cook for about 4-5 minutes on each side until cooked through and blackened.
  5. While the salmon cooks, whisk together the mayonnaise, Dijon mustard, and lemon juice in a separate bowl until smooth.
  6. Remove the salmon from the skillet and let it rest for a minute. Place each fillet on a plate and drizzle the creamy Dijon sauce over the top.
  7. Sprinkle chopped fresh parsley over the salmon if desired.
  8. Serve immediately while hot with your favorite sides.
