- 12 ounces smoked beef sausage, sliced into rounds

- ½ teaspoon chili powder
- 1 (15-ounce) can black beans, drained and rinsed

Instructions
- Heat ½ tbsp olive oil in a large skillet over medium-high heat. Brown sliced smoked beef sausage for 5-8 minutes until crispy. Remove sausage and set aside.
- In the same skillet, add remaining ½ tbsp olive oil (if needed, or use rendered fat). Sauté diced small onion and bell pepper until softened (5-8 mins). Add minced garlic, ground cumin, smoked paprika, dried oregano, and chili powder; cook 1-2 mins until fragrant.
- Stir in rinsed black beans and 2 cups chicken broth. Bring to a gentle simmer, reduce heat, cover, and cook for 20-30 minutes, stirring occasionally, until flavors meld. Season with salt and black pepper to taste. Stir in the browned beef sausage.
- While beans simmer, rinse 1 cup long-grain white rice thoroughly until water runs clear. In a medium saucepan, combine rinsed rice, 2 cups chicken broth, salt, and black pepper. Bring to a boil, reduce heat to low, cover tightly, and cook for 15-18 minutes undisturbed. Turn off heat and let rest 5-10 minutes, then fluff with a fork.
- Spoon fluffy rice onto plates, then ladle generous portions of the black beans and beef sausage over the rice. Garnish with fresh chopped cilantro and lime wedges. Serve immediately.
