Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon salt

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup apple cider, reduced to ¼ cup
  • 1 cup powdered sugar
  • 23 tablespoons apple cider

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the reduced apple cider.
  6. Cover the dough and chill for at least 1 hour.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Roll the chilled dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
  9. Bake for 9-11 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. While the cookies cool, prepare the glaze. In a small bowl, whisk together the powdered sugar and 2 tablespoons of apple cider until smooth. Add more cider, a teaspoon at a time, if needed to reach desired consistency.
  12. Drizzle the glaze over the cooled apple cider cookies.

Notes

  • To reduce the apple cider: Pour ½ cup of apple cider into a small saucepan and simmer over medium-low heat until it has reduced to ¼ cup. Let it cool completely before using.
  • For chewier cookies, bake for a minute or two less.
  • For softer cookies, ensure you do not overbake.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
