  • 4 medium zucchini, about 1.5 lbs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.25 tsp salt, or to taste
  • 0.25 tsp black pepper, or to taste
  • 0.25 cup grated Parmesan cheese (optional)

Instructions

  1. Wash and trim zucchini. Cut into 1/2-inch thick sticks or rounds for even cooking.
  2. Arrange cut zucchini in a single layer on a rack over a baking sheet. Sprinkle with salt and let sit for 15-20 minutes to draw out moisture. Pat thoroughly dry with paper towels.
  3. In a bowl, toss the dried zucchini with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
  4. Preheat air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the basket with oil.
  5. Arrange seasoned zucchini in a single layer in the preheated air fryer basket, ensuring no overlap. You may need to cook in batches.
  6. Air fry for 6-8 minutes, then open the basket, flip the zucchini pieces, and continue air frying for another 5-7 minutes, or until golden brown and tender-crisp.
  7. Remove from air fryer. If desired, toss immediately with grated Parmesan cheese. Serve hot with your favorite dipping sauce.
