Instructions
- Wash and trim zucchini. Cut into 1/2-inch thick sticks or rounds for even cooking.
- Arrange cut zucchini in a single layer on a rack over a baking sheet. Sprinkle with salt and let sit for 15-20 minutes to draw out moisture. Pat thoroughly dry with paper towels.
- In a bowl, toss the dried zucchini with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
- Preheat air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the basket with oil.
- Arrange seasoned zucchini in a single layer in the preheated air fryer basket, ensuring no overlap. You may need to cook in batches.
- Air fry for 6-8 minutes, then open the basket, flip the zucchini pieces, and continue air frying for another 5-7 minutes, or until golden brown and tender-crisp.
- Remove from air fryer. If desired, toss immediately with grated Parmesan cheese. Serve hot with your favorite dipping sauce.
